Olives and Chickpea Salad

This recipe is so easy and delicious that you’ll love it!

I made it especially for Mother`s day we all brought something to share for a Family Sunday Lunch and it was great! If you`re trying to reduce your carbs and is not a meat lover, those type of beans can be a good option make sure you don`t overeat them and try to soak it overnight to avoid unwanted gases.

This amount of recipe serves 4 people as a side dish.

  • 380g organic chickpea

  * When we leave the grain soaking overnight, it releases the phytate (the grain contains it naturally) apart from the gases, the phytate is also responsible for reducing the absorption of vitamins and minerals present in the pulses.

  • 1/2 onion
  • tomato 1/2
  • 1 tbsp parsley
  • 1tsp Mint
  • Juice of 1/2 lemon
  • 6 chopped olives

Olive oil, salt and pepper to taste

Mix all ingredients, season as you like and it is ready.

Cucumbers and tomato skin for decoration  ❤

* Tbsp = tablespoon
