This recipe is very simple and I’m sure you’ll love it!
1/2 cauliflower without the leaves
1 liter of boiling water
olive oil, salt, pepper and cheese to taste if you like.
Steam (better for preserving nutrients) or cook the cauliflower until gets very, very soft, almost falling apart.
Remove from heat and mash the whole cauliflower exactly the way you do when you cook mashed potatoes.
Add olive oil, salt, pepper, grated cheese and keep mixing/mashing until you can get rid of all the little tiny cauliflower pieces and make it look like a smooth mash.
