Spinach Frittata

The egg mixture can be used with almost any combination of vegetable or/and meat. Some good suggestions are broccoli and mushroom, pumpkin and mint, tomato basil and courgette, well, you see how it goes; the list is long and the flavours inviting.

Ingredients: 

6 eggs

115g or more of spinach

1/2 red pepper

5 cherry tomatoes

1 onion

2 gloves of garlic

salt and pepper

1tsp ghee

Directions:

Preheat the oven for 10 minutes

Place the eggs in a mixing bowl, whisking to blend, set aside. In a frying pan add ghee, crushed garlic and chopped onion and cook them until golden brown, add pepper and tomatoes and keep mixing gently. Remove from the heat and add the spinach, let it cook for 2 minutes.

You can use a ovenproof frying pan if you have, if not any other baking dish will do. Mix the vegetables and the eggs into the pan you have chosen and place it in the oven for 20 minutes, 180 degrees or until is cooked.
