Amazing Caulirice

Try this dish made simply from cauliflower, it is a “must to have” in any lowcarb kitchen, super nutritious and delicious!

Serves 2

1 head of cauliflower

1 tablespoon ghee

2 garlic cloves, finely chopped

40g toasted pine nuts

1 handful of chopped fresh parsley

In a food processor, process the florets from the cauliflower until they resemble small grains, or grate the cauliflower with a cheese grater.

Heat the ghee in a large frying pan over medium heat. Add the cauliflower, garlic, pine nuts, and parsley and sautΓ©, stirring frequently, until the cauliflower begin to brown. Add salt and pepper to taste.

For extra flavor you can add olives, spring onions, chilli and grated parmesan cheese while it`s cooking.
