Try this dish made simply from cauliflower, it is a “must to have” in any lowcarb kitchen, super nutritious and delicious!
1 head of cauliflower
1 tablespoon ghee
2 garlic cloves, finely chopped
40g toasted pine nuts
1 handful of chopped fresh parsley
In a food processor, process the florets from the cauliflower until they resemble small grains, or grate the cauliflower with a cheese grater.
Heat the ghee in a large frying pan over medium heat. Add the cauliflower, garlic, pine nuts, and parsley and sauté, stirring frequently, until the cauliflower begin to brown. Add salt and pepper to taste.
For extra flavor you can add olives, spring onions, chilli and grated parmesan cheese while it`s cooking.
