This dish works well with a side of sautéed greens, or any others you like.
Cook prawns very briefly to avoid them getting chewy.
1 tbsp butter or ghee
4 tbsp finely chopped garlic
4 tbsp dry white wine
3 tbsp lemon juice
450g large raw prawns, peeled.
Salt and pepper
2 tbsp finely chopped flat-leaf parsley
Heat the butter in a large frying pan over medium heat. Add the garlic and cook, stirring, for about 2 minutes or just until soft, but not colored.
Stir in the wine and lemon juice and when blended, add the prawns. Season with salt and pepper to taste and bring to a simmer. Simmer for about 2 minutes or just until the prawns are firm and pink. Do not overcook or the prawns will be tough.
Remove from the heat and stir in the parsley.
