It doesn`t get any easier than pan frying fresh fish and adding flavor from mushrooms, herbs, spices and olive oil. This recipe takes minutes to prepare.
4 tbsp olive oil
3 garlic cloves, crushed
3 shallots, finely sliced
1 tsp ground ginger, dried or fresh
4 wild salmon fillets
1 tbsp sesame oil
150g sliced fresh mushrooms
A heaped teaspoon chopped coriander
Heat 2 tbsp of olive oil in a frying pan over medium heat, then add the garlic, shallots, and ginger. Cook until it sizzles (about 1 minute), then add the salmon fillets and cook through (about 3 minutes on each side). Remove the fillets and set aside. Add the mushrooms with the remaining olive oil and cook for another 3 minutes. Drizzle the mushrooms over the salmon abd garnish with coriander.
Serve with a side of roasted seasonal vegetables.
